Recipe: Glazed honey pecan cookies

stacked honey pecan cookiesEase the holiday baking rush with cookies you can prep and chill ahead of time. When you need them, just slice, bake and eat your treats. A sweet glaze is a nice finishing touch.

Get locally produced flour, butter, eggs, honey and pecans from vendors at the Lenexa Farmers Market.

Ingredients

Cookie

2 ½ cups flour
½ teaspoon salt
¼ teaspoon baking soda
¾ cup sugar
¼ cup brown sugar, firmly packed
¾ cup butter, soft
1 egg
¼ cup honey, warmed
2 cups, toasted and chopped pecans

Glaze

¾ cup powdered sugar
¼ cup honey, warmed

Directions

In a food processor, mix together the flour, salt, sugars, baking soda and mix until combined well. Add butter and pulse to combine. Add egg, honey and pecans, pulse to barely bring mixture together.
 
Dump out on counter and mix by had until the cookie dough is smooth. Roll into two logs about 10” long. Wrap in plastic wrap and refrigerate for and least one hour and up to a week. 

When ready to bake, preheat oven to 350°. Slice cookies ¼” thick. Place on lined baking sheet and bake for 7–12 minutes.

To prepare glaze, mix powdered sugar and honey on a small bowl. If mixture is thick, add a little water to loosen. With a pastry brush, brush baked cookies with glaze.
