
Ingredients
1 small head cabbage (green or red) cored and grated
1 kohlrabi, peeled and grated
1 large or two medium carrots, peeled and grated
1 apple, cored and grated
1 cup mayonnaise (or ½ cup mayonnaise, ½ cup sour cream)
¼ cup apple cider vinegar
2 tablespoons honey
1 tablespoons Dijon mustard
1 teaspoon salt
½ teaspoon pepper
Directions
Place shredded produce in a large bowl.
Mix mayonnaise, vinegar, honey and spices in a medium bowl, then stir into vegetables. Refrigerate for an hour or more before serving.
For an extra burst of flavor, stir in some fresh sweet corn and/or chopped ripe tomatoes just before serving.
