Recipe: Quick and easy green beans

green beans on a plate with other foodSimply prepared green beans are a speedy side dish ideal for steamy summer. Parboil them first and finish the beans with butter and garlic.

Find freshly picked beans at the JET Produce & Meats and Next to Nature Farm vendor booths.

Ingredients

1 quart of fresh green beans, ends trimmed and snapped or cut in half 
1 tablespoon butter or olive oil
3 garlic cloves, chopped
Salt and pepper

Directions

In a medium saucepan, fill halfway with water and bring to a boil. Add green beans and parboil for 3–4 minutes. Drain beans and set aside.

Reduce burner heat to low. Heat butter or oil in the now-empty pan, add garlic and stir for 30 seconds or until garlic is fragrant.

Add green beans back to pan, and sauté until coated in the butter and heated through.

Season with salt and pepper to taste.
